Garlic Cheddar Biscuits

I found a recipe for cheddar and herb biscuits on Pinterest the other day and I knew I would have to try them! The picture looked so good. I printed out the recipe and started my revisions. I changed the name because there aren’t actually any herbs in the recipe, just in the butter topping I omitted. I make all my recipes healthier and lower in fat than the original. Here is what I came up with and MAN! Were they yummy!!

Ingredients:

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 2 cloves of garlic, minced (We LOVE garlic, if you just LIKE it, then use 1 clove)
  • 1/4 teaspoon salt
  • 5 tablespoons butter, cold and cubed
  • 1 cup fat free milk
  • 2 teaspoons vinegar (I used what I had, apple cider vinegar, but I don’t think it matters)
  • 1 cup shredded cheddar cheese (sharp would be best, but I used what I had, some Kraft Mexican blend)

Directions:

  1. Preheat oven to 425 degrees.
  2. Pour the milk into a measuring cup and add the vinegar and garlic. Let sit for 10 minutes. (If you have buttermilk, you can use that and skip the vinegar)
  3. In a medium bowl, combine flour, baking powder and salt.
  4. Cut in butter until coarse crumbs are formed.
  5. Fold in the cheese.
  6. Mix in the milk mixture until moist. Don’t over mix! You may have a couple dry spots, that’s ok.
  7. Drop the biscuits onto a cookie sheet sprayed with a non stick cooking spray. (I forgot to spray it and had a heck of a time trying to get the biscuits off the cookie sheet. Also, I was able to get 16 medium sized ones. If you like big ones, divide the batter into 12 even plops. 🙂
  8. Bake for 10-12 minutes or until the little peaks get golden brown.
  9. Serve immediately.

These came out so moist and tender! I can’t wait to make them again. If you get 16 out of the batch then they are 2.5 Weight Watchers Points each.

Chewy Dark Chocolate Chocolate Chip Cookies

The chocolate craving hit at about 1 pm today. Here is the result! 🙂

Ingredients:

  • 1 1/4 cup butter or margarine, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 ounces (1 bag) Hershey’s dark chocolate chips

Directions: (PLEASE NOTE: The pictures are for a half batch because, well, let’s face it, the last thing I need is 5 dozen cookies lying around my house!)

Before we start, check out my sou chef! I love that he is playing with a Cookie Monster book too! 🙂

1. Preheat the oven to 350 degrees.

2. Cream butter, sugars and vanilla in a large bowl.

3. Add eggs and stir well.

4. In a medium bowl mix flour, cocoa powder, baking soda and salt.

5. Slowly add the dry ingredients to the wet ingredients, stirring until combined.

6. Add dark chocolate chips and stir.

7. Drop by heaping tablespoon onto a cookie sheets.

8. Bake for 8 minutes. (I have to turn my sheets around half way through since my oven does not cook evenly.)

9. Remove from oven and transfer to a cooling rack.

10. Pour yourself a big glass of milk and enjoy!!

Full recipe yields about 5 dozen cookies.

San Diego Mini Vacation

A few weeks ago a friend of ours handed Mike a voucher for a 2-night stay at King’s Inn, a hotel in San Diego. She said she wanted us to have it so we could take a little time away! How awesome is that?? Mike and I talked about it and we decided that we I could not spend more than one night away from Samuel, so maybe my sister and brother-in-law would like to stay one night, and we would stay the other. My sister, Steph and I worked out the best days with our husbands’ schedules and we booked it! Judd and Steph stayed Sunday night and we stayed Monday night.

So, we dropped Samuel off at my mom’s and off we went.

We met up with them for dinner on Monday night at a place called El Indio. It was featured on Diners, Drive Ins, and Dives. Mike and I had eaten there the last time we went to San Diego. It was really good so we thought we would take them there. We were obviously too hungry to snap any pictures, but trust me, it was delicious!

 Then walked around Old Town for a bit. We realized that we had never been on a double date! Mike and I have been together about 7 1/2 years and Judd and Steph just about the same. It was about time. We had a blast!!

We stayed the night at the hotel and woke up the next morning and headed to the Waffle Spot, a little diner attached to the hotel. Our friend had given us two $20 vouchers for breakfast too. One for Steph and Judd and one for us (Seriously, how wonderful is she and her husband to give us all this great stuff???).

I love breakfast. It is my favorite meal and we took full advantage of our free food!! 🙂 I had the Country Casserole- biscuits and gravy and hash browns, all covered with country gravy and topped with two scrambled eggs, and Mike had the Mexican Omelet- An omelet with chorizo, jack cheese, cheddar cheese and jalapenos, served with hash browns and two mini waffles. We both got diet Pepsi to drink, in case you were wondering. 🙂

After our delicious breakfast we headed to Seaport Village. We walked around for a bit, drinking in the sights and sounds of the beach. I love the beach so much. It makes me feel really calm and the more I relax the better Mike likes me! 😉

We checked out a few shops, then we saw it!

AHHH!!! Yes! Ice cream…not only ice cream, but FREE ice cream!!! One of the things I planned on doing this on this vacation was eating something with peanut butter (since Samuel is allergic and I don’t eat it when I’m around him, which is, of course always!) One Peanut Butter Chocolate Swirl please!!

I think Mike got the same thing, but I was so enthralled in my ice cream that the world kind of faded away. 🙂 After we sat on this beautiful hill overlooking the bay, we jumped in the car and headed on our next adventure. See, we did not have any plans for this vacation, we decided as we went. Very unlike me, just very awesome!  Since we had not eaten enough (HA!) we went looking for a place for lunch. We tried the gas lamp district but realized we were not fancy enough. Lol. We ended up in Little Italy. Little Italy. Little Italy. So fun to say!

Anyway, Mike “Yelp”‘d and found us a quaint place to eat. A coffee shop and cafe called Cafe Italia. We ate inside, but the huge windows were open so it was like we were sitting outside. It was fun to watch the people walk by. the cool breeze on our faces. We ordered a panini with salami, ham, tomato and pepperoncinis. Spicy and crunchy. Yummy!

After our delicious lunch, we drove to the Horton Westfield Plaza. If you have never been there, I really suggest you go. It’s an awesome 5 level outdoor mall. The architecture draws you in; it’s really fun to look at. I know the picture is small, but you can kind of get an idea of what it’s like.

We walked around for a while and lo and behold, there was a Ben and Jerry’s and of course since it was free cone day, we stopped for another one (don’t judge! lol!) and this time I got Cherries Garcia and Mike got Mint Chocolate Chunk. Again, the world faded away! We had a movie theater gift card we had won at a Christmas party with some money left on it and I had been wanting to see The Lorax, so that was next on our adventure.

Neither of us liked the movie. I thought it was boring and Mike said it was liberal environmentalist propaganda. It was the only part of our trip we would have changed. Moving on to what could be my very favorite (food) part of our vacation. The Panda Inn.

We ordered two spring rolls, served with sweet and sour sauce and spicy mustard, and Phoenix Chicken, sautéed with garlic and ginger and served with a spicy sesame sauce (and some broccoli, but really, who cares about that when you have crunchy, sweet, tangy, spicy yummy chicken to eat???) It was so good. Soooooo good. We ended our meal with white chocolate dipped fortune cookies.

We headed back to my mom’s house to pick Samuel up. Looks like he had just as much fun as we did! I love that my mom sends me pictures of him when we are away!! Makes me miss him a little less and keeps me from cutting our trips short and zooming home to be with him! 🙂
